Of course you can assign the same color to the two vertices of some edge, then you can draw the edge via that color. For your case, I think you would like to assign different colors to vertices, since it is vertex that has different valences, not edges.

I wondered whether it is possible to assign custom colors to the different types of irregular edges (e.g. valence 3 and valence 5 edges)?
