I am rarely using Outlook either, I most of the time read and write my mails using XEmacs's "VM mode". However, when I tried to configure an auto-reply for my Outlook mailbox this week (telling mail partners "please use my other mailbox, Outlook mangles your mail when forwarding", arrgh), I found a possibility to create a sort of template for e-mails (it was a German version of Outlook, so I do not know the term used in the English version). You could select there which mail headers to include (From:, To:, Reply-To: etc); maybe you can also create a custom header line.
