It is in formail. From the man page of formail: If formail is supposed to determine the sender of the mail, but is unable to find any, it will substitute `foo@bar'. If you have access to the sources, you may change this address in config.h, then recompile and install anew. I don't know, however, whether there are some programs/scripts that rely on this specific address. At least in my installation (a v1.13.1 installation), it seems to be only formail that contains the string "foo@bar".
